On our last night in Grand Cayman, we took a dinner cruise.  The ship was originally built as a replica of one of Columbus' ships, but has since been made over as a "pirate ship".  The crew even got into the act.  Okay, it was little cheesy, but a lot of fun.  We cruised down along Seven Mile Beach until a little after sunset.  It was so beautiful out on the water!
